From their many travels through Spain, Jeannie and Chris Bone fell in love with the country’s warm culture and cuisine. In 2013, after more than a year of research, planning and finding the ideal location, they were ready to present Los Angeles with a Spanish restaurant that delivers a truly immersive Spanish dining experience – Casa Córdoba.
Chef Erik Zeda joined the team to help shape the future of the Spanish restaurant. To best leverage the creativity his talents, Jeannie and Chris upgraded their kitchen and arranged an inspirational trip to Spain, covering multiple cities, focusing mostly on the Andalucía region of southern Spain. Together, they shared a common experience of Spain’s culture and diverse culinary styles to stimulate ideas for Casa’s menu. Since then, Chef Zeda has infused his interpretation of traditional Andalusian cuisine into Casa’s menu with new and exciting tastes. Today, Inspired by seasonal changes, Chef Zeda constantly evaluates and creates new dishes for Casa's menu.
Erik Zeda, trained under the tutelage of Chef Mike Brown, previously of Patina, Wolfgang Puck and the Consilient Restaurant Group, beginning their association as the opening team at Rick Bayless' west coast concept, Red O.
Pursuing more opportunities in Dallas, Chef Zeda continued his affiliation with Chef Brown and helped open a Mexican fine dining concept for the Consilient Restaurant Group. The restaurant was a front-runner for "Best New Restaurant" per Leslie Brenner, restaurant critic for the Dallas Morning News. While still in Texas, Chef Zeda completed the second portion of his culinary adventure under Chef Brent Hammer at Hibiscus, a longtime Henderson Avenue staple in Dallas' bustling entertainment district.
